Tips:
1. Basmati rice bob tro – dio byth yn mynd yn slwj (ma na basmati brown hefyd sydd yr un mor dda pan tisio teimlo’n iach).
2. Golchi cyn cychwyn (dwr oer), golchi ar ôl coginio (dwr berw – yn lle gorfod berwi tecall eto jest gadael mymryn yn y tecall ar ôl berwi fo tro cynta).
3. Amsera fo’n union. Sdopwats ar y ffôn lôn i fi bob tro, ond dwi’n lecio bod yn wyddonol efo bwyd…
4. Rhoi o nôl yn y sospan a rhoi’r caead arno am 5 munud. Ma’r stem yn fflyffio fo’n braf.
5. Rhoi un stir efo fforc cyn gweini. Bydd yn ychwanegu at y fflyff

The method seems complex, but it belies its simplicity.
1. Basmati.
2. Wash in cold water seven times.
Here I depart from RaD. There should be ABSOLUTELY NO NEED to wash when cooked.
3. Place in suacepan, preferably cast-iron.
4. Add water to a “thumb’s nuckle” (2 cm?) above the level of rice. This is the part that must be exactly right, which is why I’ve hestitated to give units. Exactly right in a kitchen should not need units of any sort.
5. Bring to boil.
6. Stir 8 times with a wooden spoon (*)
7. Reduce heat and leave until (10 minutes or a bottle of beer) and it’s all fluffy and nice and servable. All the water should be gone and there’s no draining to be done.
8. Scoop into a cup before serving – your date will love the nice shape it makes.
9. There’s bits stuck to the bottom for the washer-up to deal with tomorrow.
* = It probably doesn’t matter what the spoon is made of.
